Sunday Brunch – Savory Cake @ 2DM

I posted this over at 2DM - blogazine, this weekend:

The past weeks where special ones.
We had a sad family gatherings, huge cooking jobs and in between I  finished my book. On one occasion my sisters brother in law baked this  cake and brought it to her house.
After tasting a slice we all couldn’t stop eating it. So I asked him for  the recipe to share with you.
He had thought of the recipe himself and luckily new it by heart. So I  jotted it down quickly and made it at home as soon as I could.
It’s lovely.
Please use salt and pepper to taste, but don’t forget that parmesan,  olives and feta are salty too!

Wedding Thank You's

For a huge wedding that took place in an orchard last May, I made 'Thank You' gifts. They were printed on laptrays.

The bride and groom handed them out to their best friends, who had helped them so much during their big day. 

We also catered the event, it was one of the nicest weddings I've ever seen.

Elderflower Syrup

Bottled my first batch of Elderflower syrup this year.

Mixed with some fresh sparkling water and a slice of lemon, it's one of my favourite summer drinks, I think.

Fixing some food for the BBQ for Elle Eten, the summer issue

On a sunny day, not very long ago I did the food styling for a shoot with photographer Carlfried Verwaaijen and stylist Marjolein Vonk. It was quite a day, with a tremendous lot of food that we had to squeeze into only two spreads for Elle Eten (the food Elle). The recipes were written by Julius Jaspers.

We all smelled like smoke and BBQ for days on end, but we had a lot of fun!

Last week was my husbands (we  recently got married, so I have to get used to the fact of saying  husband instead of boyfriend), birthday. He loves pancakes and caky  things. Especially with fruit!

So I made him these crossover  caky-pancakes for breakfast. They turned out so great, that I’ve made  them a few times after that to get the recipe right for you to make them  too.
Eat them with fresh raspberries, as we did, but I can imagine them with  strawberries and cream, melted butter and maple syrup, castor sugar,  cinnamon and butter too…. miam miam!

Home Made by Yvette

Our lovely food contributor hailing from Holland, Yvette van Boven, will not be able to feature her tasteful illustrated-recipes this week cause she’s really busy on a project called “Home Made”. What is it all about? Essentially focused on food, which we cannot leave aside with Yvette, “Home Made” will be a collection of many useful and step-by-step illustrated stories-recipes, in which the reader will be challenged to learn and prepare new things. New home made things.

A series of tips to use the ingredients you already got in your fridge, without any expensive or complicated machines or devices.
The book works up from the morning and cooks itself throughout the day; so you’ll be pleased to make your own brewed tea, bake cakes and why not, your own drinks, nibbles, bites, till mayonnaise for those who need something to eat after a night out.
The ‘Do it Yourself’ philosphy is the one embraced by Yvette, who wisely designed the fonts, cut and drew the illustrations, wrote all the recipes, made the food styling and finally set up the book. Within a totally womanly matter, her husband Oof Verschuren shot the pictures inside the book. Will you be able to wait ‘Home Made’ to be out by the end of August? Considering this tantalizing preview, we won’t.

I just posted another little brunchrecipe over at 2DM blogazine, this afternoon. Here it is, just in case you missed it!

This Sunday is perfect for Oeuf Cocotte: Little ramekins filled with an egg, some cream and something else you'd like to have. I love spinach so that's what I'm having this weekend. But I expect you can also fill your ramekin with some smoked salmon and chopped asparagus, or fried mushrooms, crème fraîche and thyme. It's your brunch so you fix yourself your own 'oeuf cocotte' with your favourite ingredients!
Cooking time is 10 to 15 mins, depending on how you like your eggs done.

I'm really getting excited now. Our book is almost finished, so that's great. 

Since this weekend you can get little versions of our big book for free at the counter of almost all the bookshops in Holland. I'll show some pages of it down below. It really is beginning to look like the real thing, isn't it? 

Oof Verschuren, my husband, took the wonderful pictures and I did everything else. It's a hell of a job, but the best thing I've done so far. I'd do another one in a blink.

This month I did a story about making your own dairy products for Delicious. Magazine. It was a lot of fun with one of my favorite photographers: Eric van Lokven and stylist Jet Krings. 

The Story starts off with 'Hangop' a very Dutch recipe I'm quite fond of. I posted a recipe for it a while ago, here and here.

Sergio Herman - LIV'

I just finished this recipe for a nice travel magazine called LIV'. They were doing a story on top chef Sergio Herman and they kindly asked me to illustrate one of his recipes. I was really enjoyed to do so. But when I finished it, they had to call me that the Magazine had just been shut down. Such a shame, they were doing such a good job. I believe that they still work online, so go over there quick before it's gone completely.

Anyway, this is the recipe, I quite liked it so I decided to share it with you anyway.

A new Allerhande magazine is out in the shops now. My new handwriting-font(remember?)is finally used in it. Their website is finally officially online too. For those who haven't seen it yet, it's quite nice and you will find a lot my work on it.

Hi all > 

I'm working on a huge cookbook at the moment, this is why I may not seem as productive as I usually am. I just wanted to let you know, as it's getting to a point that I'm working on it day and night now and the deadline is in sight. 

It's due to be in the Dutch bookshops by the end of August. 

I will post more on the project, when I have more to share with you, of course. 

At this point I can only tell you tell you that it's very exciting and I'm beginning to feel a little proud already. 

But we'll see.... all in time I guess.

Spicy Semolina Crème Brûlée

 
For 4-6 people (depending on the size of the dishes)

Preparation Time: 20 minutes

ml liters milk (about 2 cups)
ml cream (about 1 cup)
/ 2 vanilla pods, cut open and with the seeds scraped out
1-2 star anise (and more to garnish)
lemon (preferably organic), grated
g semolina
g sugar + extra for the crispy top

Tools needed: small heat resistant dishes or cups, crème brule burner… torch – burner ? Or a good grill.

Pour the milk and cream in a saucepan. Add the vanilla (pod and seeds), star anise and grated lemon. Heat just up to the boilingpoint and then allow to simmer on low heat for about 15 mins. Remove vanilla pod and star anise. Sprinkle the semolina in and the sugar, stir well. Bring to the boil.
Let the mixture stand over low heat, stirring regularly, until the pudding is as thick as custard. Pour the semolina pudding in the dishes and allow to set, put it in the refrigerator to cool completely.
Just before serving, sprinkle with sugar and heat it up with a crème brûlée burner for a crispy caramel top. Garnish with star anise and serve immediately.

It looks really nice I think. (look for the little backdrop of stars I made a while ago)
Anyway, I was asked to fix the illustrations for it and if you read it well, you will notice my handwriting everywhere in the magazine too (Remember my earlier post?)

As I said earlier this year, the Dutch ELLE magazine is 20 years old. To celebrate this event we did a huge story for ELLE, ELLE ETEN (the Food department) and ELLE WONEN (Living). The food magazine is out now, we fixed a big, festive, but very easy, menu. For all you X-mas people out there! Styling was done by Kamer 465, pictures were taken by René Kramers.

The first issue of WHAT (NOT) TO EAT 2010 was presented yesterday in the Metropolitan Deli (the chocolate & ice-cream shop of Kees Raat). It's a food-trend-guide written by food-trend watcher Marjan Ippel. She asked me some time ago, to make some illustrations for the guide and, of course, I was very happy to do that.

For the 38th issue of Margriet Magazine of this year, we did a very nice story about RICE. I particularly like the sweet one in the glass, don't you? I wrote the recipes and took care of the food styling, but Saskia van Osnabrugge took these lovely pictures and Judith Beahner was in charge of the styling.

Elle celebrated their 20th anniversary yesterday in Amsterdam. It was a great party right on the canals! They launched their huge new issue at the end of it. I did a story in it, which will continue in Elle Eten (the food department) at the end of the year. So watch out for that. Kamer 465 did this huge styling job and René Kramers took the wonderful pictures.

Marcel Christ and Marlies Neugebauer asked me to make paper cuts for a pitch they were asked to do for L'or de Vie from Dior. The contestants were published this month in the French IMAGES magazine. And ...we got the job. I will tell more on this exciting story as soon as I can.

Stéphane Reynaud's new book

The french chef and writer Stéphane Reynaud's newest book: 'RÔTIS' has been translated in Dutch. It's Called GEBRAAD now. Pulbished by dutch publisher Fontaine & the belgian Lannoo. I had the honor of 'translating' the wonderful drawings done by french designer TABAS into a dutch version. The little ones in red are from TABAS, I did the rest, using his drawings as an example. It was a great job, as I am very fond of Stéphane Reynauds work too.

Well, I think I should first say 'THANK YOU' to all of you. The past few days I got so many responses on my brand new little blog.
A special thanks to Pia Jane Bijkerk, for putting me out there, but also a big thank you to bloggers as: Le Divan Fumoir Bohémien, Decor8 or Room Design studio and many others for quoting me. I just started this and I'm beginning to get the hang of it! I will try to to keep up with you!

Anyway, back to buisness: Margriet Magazine just did a little story on outdoor cooking, a I fixed the food for it. Louis Lemaire took the pictures and Judith Beahner was the prop stylist. It was a very rainy day, but I think you would never guess...

The new Elle Eten came out this week! We, Saskia van Osnabrugge (Photography) and Annemieke Paarlberg (Prop styling) and me (Food styling), took care of the Cooking Club story again. It was a story about a Mediterranean summer. Lot's of fish, chargrilled flat bread and home made three-kinds-of-chocolate-semifreddo!

Rhubarb compote with Verrry Dutch: Hangop 

for 8, preparation: 35 min (plus 1 night)

The sweet and sour compote works really well in combination with the fresh and creamy taste of hangop.

For the rhubarb compote:

½ kg rhubarb, well cleaned and cut in pieces of about 1 cm
g sugar, or more to taste
cinnamon sticks
cardamom pods
vanilla sticks, halved and seeds scraped out
clementines or 2 oranges

For the hangop:

1 liter yoghurt
1 liter cream
the seeds from 1 vanilla pod
the grated peel of 1 lemon
100g icing sugar
(30 min plus 1 night period)

FOR THE COMPOTE:
Fill a large baking tin with the rhubarb, sugar, cinnamon, cardamom and vanilla pods and seeds, mix well. Half the clementines, squeeze them over the rhubarb and tuck the peel in too. Cover with aluminum foil. Bake for about 30 minutes in a preheated oven at 180 ° C. Turn the rhubarbmix over so now and then. When cooked, take out of the oven and leave to cool completely overnight. This also marinates your compote, but you can eat it right away if you cant wait.

FOR THE HANGOP:
Meanwhile, spread a clean tea-towel out over a sieve. Put the sieve on top of a bucket or big bowl. Pour the yogurt in it and cover with a sheet of plastic film. Put the whole thing away in the basement or in another cool place in your house for a night or even longer.
The following day: beat the cream with the vanilla, the lemon-zest and sugar. Mix the yoghurt from your sieve (it will be stiff, like fresh cheese!) carefully with the whipped cream. 

TO SERVE:
Remove the spices from the compote. Fill eight glasses halfway with the compote and spoon a big dollop of hangop on top. Serve immediately: you will be thrilled!

The last issue of MARIA magazine came out this week. I was responsable for the foodstories and have been working with such great pleasure on every story! Together with stylist Pia Jane Bijkerk we really did some great things. Thank you MARIA for all the good times. All pictures were done by Jeroen van der Spek.
In this last story we did a production about the new rosé wines from the winery of my friend Fleur van Heemskerck@Domaine de L'Amaurigue and what to eat with that.
